Our catering embraces the principles of short supply chain and km0, to ensure our guests the high quality of our products and a deeper knowledge of where our ingredients come from. We also pay special attention to safeguarding biodiversity. For this reason, among our vineyards we host several beehives to promote the important work carried out by bees and we manage a small herd of Brogna della Lessinia sheep, the only native breed of the Veronese mountains that has survived extinction, a heritage of biodiversity and sustainability recognised by Slow Food.
Born in Calabria, Giuseppe Lamanna began his first experience in the kitchen at the age of 16 and then grew more and more in the restaurant business until, at the age of 27, he achieved his role as Chef at the head of brigades of 15 cooks. In 2021, he arrived at the Ca' del Moro Wine Retreat Restaurant and began his journey as Chef in an enchanted, romantic place, immersed in nature among the vineyards of the Valpantena.
Thanks to his know-how and his brigade of professionals, each guest has the opportunity to enjoy an exceptional menu, rediscovering the treasures of Lessinia in each dish; a true art of personalising and perfecting the proposals with variations from all over Italy.
